They produce a lot of tubers and they are also very easy to grow. They mostly take care of themselves, even when neglected for years. Unfortunately, these resilient characteristics could also be described as weedy. Sunchokes can easily get out of control and take over. Once they are established, it can be hard to get rid of them. One of the biggest problems is that they form long rhizomes and spread where you can’t find them all. Here is the solution! The dwarf sunchoke is a short, compact plant with no stolons and thus no tendency to spread. It is also small enough to be grown in a pot. This variety was bred by SVP Wirrsum in the Netherlands in the 1980s. Culinary Traits The flavor of the tubers is fine, which is to say that it is virtually indistinguishable from the flavor of any other sunchoke as far as my palate is concerned. Tubers are small to medium-sized, red/purple, moderately to extremely knobbly. This variety is not suitable for peeling due to the irregular surfaces. Agronomic Traits Plants are very short, reaching about 18 inches tall at maximum. Tubers are connected directly to the base of the stem. Flowering is brief, often terminating in the bud stage.   They are high in inulin, which is a carbohydrate that is not broken down into sugars in the human body, so it is good for people with diabetes. They can be eaten fresh/raw right out of the garden, but care should be taken to wash them thoroughly. Some people also juice them and they are supposedly very good juiced with apples or carrots. They can be used in much the same way as potatoes, although they do have a different texture and flavor being much less starchy and a little sweeter and earthier than regular potatoes. They can be sliced and made into chips. They can be boiled and mashed. They can also be fried. My favorite way to eat these is actually to mix them together half and half with regular potatoes and fry them.  This is an heirloom crop that you can grow year after year. They are extremely easy to grow and will not only grow, but thrive in any soil conditions or climate. I know of nowhere in the US that these will not grow, as well as many places around the world including Canada, Europe, Central and South America, The Orient, The Middle Easy, Africa, and many other corners of the world. This is truly a famine food, and are prized by preppers.  In Zone 8, here in Louisiana, these plants are prolific. They start to sprout here in late April -Early May and start to put out their vibrant yellow flowers in late July -early August. You can harvest the tubers in the fall starting around early October. Once frosts hit, you can cut down the stalks of the plants and harvest tubers as needed. They will keep better in the ground. After you receive your tubers, I recommend planting them out directly in the location you wish to grow these.
