Sparge and Collect Wort After the mash step, you’ll need to separate the wort (the liquid) from the grains: Sparging: Gently rinse the grain bed with hot water (about 170°F/77°C) to extract any remaining sugars. Collect this sugary liquid — your wort — in a separate container. (If you're using a 1-gallon kit, you'll collect about 1 gallon of wort; for a 5-gallon batch, you'll collect around 5 gallons of wort.) Note: If you're not using a mash tun, you can also strain the wort into another pot. Some homebrewers use a fine mesh strainer to help catch excess grain.5. Boil the Wort Bring the wort to a boil in your large pot. Once it starts boiling, add hops according to the instructions: Bittering Hops: Add Cascade hops (0.5 oz for 1 gallon, or the appropriate amount for your batch size) as soon as the boil begins. This provides bitterness to balance the malt sweetness. Boil for 60 minutes: Let the wort boil for 60 minutes, stirring occasionally to avoid burning the wort at the bottom. Boiling helps sterilize the wort and evaporate unwanted flavors. Flavoring Hops: Add the remaining Cascade hops (for flavor and aroma) about 15 minutes before the end of the boil. Optional: If you want more hop flavor, you can add additional hops during the last 5 minutes or even after turning off the heat for a "dry hop" flavor.6. Cool the Wort After the boil, cool the wort quickly to about 65°F (18°C) for fermentation. You can do this by: Using an Ice Bath: Place the pot in a sink filled with ice water to help cool the wort faster. Stirring occasionally will also help the cooling process. Using a Wort Chiller: If you have one, this is the most efficient method to rapidly cool the wort.7. Transfer to the Fermentation Vessel Once the wort is cooled to 65°F (18°C), transfer it into your fermentation vessel (this could be a carboy or bucket fermenter). Leave Sediment Behind: If you're using a large pot, try to avoid transferring any grain sediment left behind after boiling. A siphon can be helpful here to avoid transferring the grain solids into the fermenter. Add Water: If you didn’t collect the full volume of wort needed, top up the fermenter with clean water until you reach the target volume for your batch (e.g., 1 gallon for Kit 1, 5 gallons for Kit 5).8. Pitch the YeastOnce the wort is in the fermenter and at the right temperature (65°F/18°C), pitch your yeast. Simply sprinkle the dry yeast into the wort. If you’re using liquid yeast, you’ll need to re-hydrate it before adding it to the wort.Seal the Fermenter: Attach the airlock to the fermentation vessel to allow CO2 to escape during fermentation while preventing contamination.9. FermentationPlace your fermenter in a cool, dark area with a stable temperature of 65°F (18°C). Most ale yeast strains ferment best around this temperature.Fermentation Time: After 1-2 weeks, the yeast will have consumed most of the sugars and the beer will be ready to transfer for bottling.
