It isn't actually watercress at all, but rather a watercress look-alike. Usually sold with the roots still attached, upland cress has the same flavor and nutrient density as watercress, but its stems and leaves are thinner and more tender, like baby watercress. Rich in vitamins, iron and calcium, it can be eaten raw in salads or sandwiches or cooked as greens. It is very tolerant of cold weather and can be grown almost all year round, with leaf production at its peak during the summer and autumn months. In ideal conditions, it can be harvested approx. 7-8 weeks from sowing by taking the outer leaves as desired with scissors. Great in any garden, it's suited for growing in pots or containers if space is limited, and the more it is cut for use, the more it will regrow. Young leaves used raw or cooked as seasoning. Having a hot spicy flavor they are a useful addition to salads, the land grown alternative to water cress being similar in taste. The seed can be sprouted. Can be cropped all year if autumn sowing are given protection through winter. Sow Spring to September. Succession sowing for continual cropping, position full sun for winter crops, while partial shade is best for summer crops. GROWING GUIDE: Sow shallowly outdoors in a 2-4" wide band, early spring through early fall or indoors, year-round, in a flat. Begin harvest in 7-10 days when 2" tall. Sow every 2 weeks for a steady supply. For full-size rosettes: Direct seed from midspring onward, about 15 seeds/ft., 1/4" deep. Keep soil moist as the seed germinates slowly. Thin to 4-6" apart. Harvest rosettes at the below the basal plate. For baby leaf: Sow 3-5 seeds/in. in rows at least 2" apart. Harvest above the basal plate when leaves reach desired size. Watercress: High moisture requirements make direct seeding difficult. Direct seed about ½" apart, ¼" deep. Thin to 4" apart and keep well-watered, or start seed indoors, keeping the soil moist. Transplant to large pots, cold frame, or field with soil that is fertile, humus-rich, well-limed, and has a pH around 7.0. Keep soil moist or sit pots in pans of water and renew water daily.
