Description: In the real South, cast iron skillets are passed down. Something she said about the Griswold triggered his memory. He laid awake remembering the smell of bacon or hamburgers cooking in the morning before he walked to school. Her Grandpa made sure all kids had a hot breakfast, they shared memories of the same morning sounds of the skillet soundly settling on the stove. Bacon, eggs, fried bologna, heated up left over fried chicken, ham, gravy, toast or biscuits. Whatever was available her Grandpa, in his Big Smith overalls and starched long sleeved shirt, made them a good hot breakfast. He wasn’t so traditional, up until the 7th grade, he wanted hamburgers for breakfast. “Hmm” she smiled. As long as it was cooked in an iron skillet, it counts. Cast iron cookware is easy to cook with, you can clean it with just water and a good wipe down, occasionally if it hasn’t been used in a while, the seasoning begins to wear off. No worries, won’t affect the taste of what you’re cooking, just enhances it. For anyone who is lucky enough to inherit a seasoned pan, you inherit history that’s a taste on the wind. Remnants of past fried bacon, sausage, gravy, chicken; whatever was cooked in the cast iron piece it continues to give and food just gets better. Something you can’t really describe, just make sure you keep them good and oiled. My Grandpa cooked like this, in a pan like this -a pricey one for the time she said. The Griswold Colonial Breakfast pan, she loved it, but her Grandpa’s pan and the Browning 12g went to her brother; the only boy. Two spots for fried eggs, a place to cook your breakfast meat. Or you could swap, and cook sausage up top and eggs below. For him…all his Momma cooked him was hamburgers, and eggs for herself. Well, he lived in town, what do you expect? You are buying historical southern cuisine history here that will give up essences of many breakfasts over nearly 100 years. Some of the pan seasoning has worn off, but will easily accumulate once you use it. The more you use it, the better. On weekends they alternate and bring the other breakfast (from his family’s pan and coffee (from a percolator) in bed. He had bought this one out of nostalgia because he loved her. She loved him and his family pan, that’s why she married him; he understood the ghosts of past meals converging in the present. The only thing this pan is not really designed for is biscuits. Y’all have to wait out for the biscuit pan. Her Grandpa, his Momma had biscuits; they just did not come from a blue tube with a marshmallow fellow. Seasoned, loved, meant to be used. The one item she would grab if the house were on fire. He would grab her. Their gift as real southerners to you at a good price.
